Trail Mix Yogurt Balls

Winter is finally behind us, the snow is melting, and it’s time to get outside. Spring fever is REAL. All I want to do is get my nose out of the books and into the fresh air. Days like this are what I’m dreaming about….

Creating simple yet delicious grab n go snacks will allow for easy energy to fuel your spring fever adventuring. What better than some mouthwatering trail mix yogurt balls?

A simple twist on my original recipe: just add coconut flakes, craisins, and chocolate chips to the mix-ins! Perfect way to satisfy that mountain craving inside all of us.



Trail Mix Yogurt Balls

1 1/2 cups plain yogurt

1/4 cup canola oil

1/3 cup honey

1 3/4 cup whole wheat flour

2 cups rolled oats

1/2 tsp salt

1/2 tsp cinnamon

1/2 cup chocolate chips

1/2 cup craisins

1/2 cup coconut flakes

Preheat oven to 375ºF. In a large mixing bowl, combine all wet ingredients (yogurt, oil, and honey). Add dry ingredients (oats, salt, and cinnamon) to wet ingredients and mix until well combined. Add flour in small increments until dough is thick yet moist. Add in mix-ins (chocolate chips, craisins, and coconut flakes). Roll into balls and place on a cookie sheet. Bake for 12-15 minutes, or until lightly golden brown.
