3:00 drag got you dreaming of food jumping over the moon? Same here. Sometimes you just need a snack to keep your brain functioning during those last couple hours of productivity before it’s time to unwind at home. Here’s a quick 1 minute idea of a tasty bite to tide those hunger pains away.
I first learned about the lemon pepper + avocado combination on a family vacation to Lake Powell. Aunt Marianne fed us very well throughout the entire trip, but this particular snack was a favorite of mine. The freshness of the avocado with an added zang of lemon juice was unforgettable.
Avocados are a rich food, full of monounsaturated fats (the HEALTHY ones!) that are thought to help prevent heart disease when used in replacement of trans and saturated fats. I like to scoop the avocado out onto a pretzel for a nice salty and savory combination. A much healthier option than grabbing a bag of potato chips when the fat and salty craving comes out!
This is also a fairly easy snack to pack. It can be prepared beforehand and stored in an airtight container. The acid from the lemon juice will help prevent any browning that may occur on the avocado once it is cut.
Lemon Pepper Avocado Delight
1 avocado
1 sprinkle of salt
1 sprinkle of lemon pepper
1/4 tsp lemon juice
handful of pretzels/crackers of choice
Cut the avocado in half. Slice the avocado both vertically and horizontally to create small rectangles. This allows the flavors to seep down into the full avocado and makes it easier to scoop out onto a cracker. Sprinkle seasonings and splash the lemon juice on top, dip your crackers in and enjoy!
